Ingredients
  • 1 clamshell Bowery Basil, leaves cut from stems
  • 1 cup raw, whole cranberries
  • 2 large egg whites
  • 1 cup sugar
Preparation
  1. Whisk egg whites with 2 teaspoons of water until frothy.
  2. Place sugar into a shallow bowl or plate, and set next to a wire rack.
  3. Working one leaf at a time, brush egg wash onto basil leaves, then press egg-wash side down into sugar and transfer to the wire rack to dry, sugar side up, for at least 1 hour, or until firm and dry. Repeat until all leaves are covered.
  4. Add cranberries to the remaining egg white mixture, and toss to coat. Remove from excess egg white, and toss to coat with remaining sugar. Transfer to the wire rack to dry completely.
  5. To create a holly berry design, place three candied cranberries in a triangle formation, with one basil leaf in between each two berries, for a total of 3 leaves and 3 berries!
