- 1 pound lotus root (peeled, trimmed, and sliced)
- 6 cups water
- 1 cup organic cane sugar
- 1 cup water
- 5-6 sprigs Bowery Basil
- 4 ounces Lotus Root Tea
- 2 ounces Basil Simple Syrup
- 1 ounce fresh lime juice
- 2-3 cooked lotus root slices (from Lotus Root Tea recipe)
- 1-2 sprigs Bowery Basil for garnish
- Make the lotus root tea: Bring water to a gentle simmer in a large pot. Add lotus root to simmering water, partially covered, for about twenty minutes. Let cool, transfer entire contents to a pitcher and refrigerate.
- Make the basil simple syrup: In a small saucepan over medium-high heat, combine cane sugar and water, stirring until dissolved. Remove from heat and refrigerate. Once chilled, combine syrup with basil in a blender and purée until smooth. Pass mixture through fine-mesh strainer and refrigerate in an air-tight container.
- To make the wellness drink, combine 4 ounces of lotus root tea with 2 ounces of basil simple syrup and lime juice in a glass with ice. Stir well, add lotus root slices, and garnish with a sprig of basil. Enjoy!
