Balsamic Salad Kit with Lemon Herb Chicken Skewers

  • 1 pound boneless, skinless chicken breast
  • 1/2 cup greek yogurt
  • 2 teaspoons dried oregano
  • 2 tablespoons red wine vinegar
  • 2 tablespoons dijon mustard
  • 1 lemon, juiced and zested
  • 4 metal skewers
  • Balsamic Salad Kits, for serving
  1. In a bowl, combine yogurt, oregano, vinegar, mustard, and lemon juice and zest. Season with salt and pepper.
  2. Cut chicken breasts into 1-inch cubes, and add into yogurt mixture. Toss to coat, then cover and refrigerate for 1 hour.
  3. Remove chicken from fridge and evenly thread onto skewers.
  4. Heat a grill pan over medium high heat, and spray with olive oil. Once hot, place skewers on pan and cook for 2-3 minutes, or until the underside is browned and releases from the pan easily. Flip 30 degrees and cook for 2-3 minutes more. Flip once more and cook until fully opaque throughout.
  5. Let the skewers cool slightly, then top your Balsamic Salad Kit with them.
